1) Use this contextual menu item to clean up text. Remove Quoting is great for cleaning up those joke messages you receive with multiple quotes.

2.) Define: Highlight a word and hold the control key to get Define.

Entourage Dictionary shows definition.

3) Popup Menus

Look for toolbar buttons that have a downward pointing triangle in them; they hide menus that pop up if you click and hold on them.
